Great knife for those on a budget or just getting into processing primal cuts
Great knife for those on a budget or just getting into processing primal cuts. Knife is sharp. If you are going to process big pieces of meat, you need a breaking knife to make the job easier. If you are just starting out (like me) looking to save some money turning big meat into smaller meat, this knife will help you without breaking the bank. Sharp as heck and easy to clean. I got a smaller boning knife to go with it, and both are a huge help. I thought it would just be a luxury, but when you're working with a 40+pound piece of meat, the long sharp knife helps you work faster.

Good purchase
What's not to like about this knife. It comes super sharp. Cuts nicely and hones quickly with a steel. The one thing I had to get used to was the super light weight compared to the high dollar knives my work provides. However the work knives dull quickly and are much harder to sharpen. The less time I have to spend sharpening a knife gives me more time to do the work of running the market.

Good night does the job?
Never knew I needed a breaking knife till I watch YouTube videos. Sure does help buying primal cuts of beef from Costco

Professional quality
I’ve used this knife for 2 years in the butcher shop as well as farm slaughter/butcher. Got a lot of miles on it but it’s still in use. Holds an edge quite well. For the price, you can’t beat this “blue collar” knife.

You can't beat it for the $$
Under 17.00 for a ten-inch knife not too bad. Been cutting meat since 1980 and had lots of knifes companies have supplied and knifes, I got on my own. This one I got on my own used it today for five hours off and on and it felt nice in the hand. Just got done sharping it and will take it back to work on Tuesday. It's like a razor now. From the same company will be getting a eight-inch knife on Tuesday of this week. Also getting ready for Deer season.

Very sharp
This knife was recommended to me by a butcher. He was spot on. I use it to slice the extra fat off of briskets and it is great for heavy duty kitchen work. It is very sharp, but like all knives it should be cleaned and sharpened between uses. I would recommend it without reservation.
