The cloud ear that I have collected in the wild have been more jellylike than these. I just cook these longer and chop them up smaller.

One of my favorite soups from Chinese restaurants had this black fungus in it. I use it with beef bone broth and egg drop in with a dash of chile sauce and it is a filling keto friendly meal that keeps me full and helps me get some intermittent fasting in.

These wood ears hydrate to a large size in a short time. They are tasty in curries and other dishes and add very few calories. My only complaint is that they are quite dirty. They took quite a few washes before the water the wood ears is soaked in is clear.
