Will this work with Roland V-Drums?

Probably. It will tell you the frequency/note of whatever you play in its vicinity. I don’t own an electronic kit myself, but I’m pretty sure you can adjust the pitch on each pad. I can see the tune-bot being used to help dial in specific notes, assuming that’s what you’re aiming to do … I use my tune-bot all the time for my acoustic drums; I love it.

Does this work for timpani?

I’ve never used on timpani, but I’m sure it would work just as well just a larger drum.
